This keto banana pudding is super easy to make and one of my all-time favorite desserts. It’s a luscious creamy keto pudding that tastes just like a classic Southern recipe but with fewer carbs and sugar. It’s almost impossible not to like it.

I know that everyone will say that bananas aren’t keto-friendly, and that’s true. But no one said that you can’t enjoy banana flavor on keto in another way.

Today, I’m going to show you how to make the creamiest and most delicious keto banana pudding recipe that you will ever try. Yes, you read right, Keto Banana Pudding needs just a few low-carb ingredients.

It’s impressive that a serving of this low carb banana dessert has only 2g carbs. Since we’re using pure banana extract, there’s no need to worry about carbs.

We announce with sadness that bananas aren’t keto. Instead, they are high-carb food and would provide a source of sugar and raise blood sugar.

One medium-sized banana contains over 25 grams of carbs, which is more than the daily carb limit for most people following a ketogenic diet.

However, if you’re not overly sensitive, you can enjoy a few slices from time to time.

Is Banana Pudding Keto?

No, banana pudding is not keto-friendly because regular banana pudding is made using white sugar, flour, and banana puree. 

One serving of traditional banana pudding can contain up to 60 grams of carbs.

But don’t worry because, just like I said in my latest post: Nothing beats keto. With just the proper substitutes, you can make your keto banana pudding, which is even more delicious than the regular one.

Ingredients Needed

You won’t believe how few ingredients you will need to make this delicious keto banana pudding.

  • Heavy cream –almost 30 minutes before you start making the pudding, I recommend taking it out from the fridge and letting the cream at room temperature. To make a dairy-free keto banana pudding, replace it with canned coconut cream.
  • Almond milk – Unsweetened milk is necessary, and you can choose your favorite plant-based milk. I used almond milk, but coconut or hemp milk makes this pudding just as delicious.
  • Egg yolks – Even if you need to use only the yolks, you don’t have to throw out the whites because there are many recipes that you can make with them. You can try my zero-carb keto cloud bread.
  • Sweetener – I used Erythritol in this recipe, but Monk Fruit sweetener or Allulose work as well. 
  • Butter – Make sure you use unsalted butter. If you’re using salted butter, make sure you don’t add salt.
  • Banana extract – What’s keto banana pudding without the banana? This natural banana extract will give the keto banana pudding the perfect flavor without even using the natural fruit.
  • Vanilla extract – You guys know already – almost no dessert without vanilla. It’s my favorite!
  • Xanthan gum  I have two tips for you – don’t forget about this ingredient and use the right amount. Too much xanthan gum can compromise the texture of this pudding, making it too sticky and gummy. Don’t use more than 1/4 tsp in this recipe. It’s best to start with 1/4 tsp and whisk until it starts to thicken.

How to Make the Best Keto Banana Pudding

The ingredients for this banana pudding are enough to make two or four delicious servings. Here’s everything you need to do:

Begin by heating the whipping cream and unsweetened milk in a saucepan over medium heat until it reaches boiling point.

Meanwhile, in a separate bowl, whisk together four egg yolks, sweetener, and a pinch of salt.

Add 1/2 of the hot cream to the yolk mixture and whisk thoroughly. Then, pour the mixture back into the saucepan and continue whisking. Cook for 2-3 minutes until the mixture slightly thickens.

Turn off the heat and add the butter, banana extract, and xanthan gum. Whisk well until fully combined.

Next, divide the pudding between 2 or 4 serving glasses and let it cool to room temperature before refrigerating.

When ready to serve, decorate your keto banana pudding with sugar-free whipped cream, a few banana slices, or a mini keto Snickerdoodle cookie.

Tips for Making the Perfect Keto Banana Pudding

If you want to make the creamiest and most delicious keto banana pudding on your first try, you need to read these tips:

  • Cover the pudding with plastic wrap before you put it in the fridge to ensure no air gets into the pudding.
  • When whisking the egg mixture into the warm cream, whisking continuously. If the cream is too hot, the eggs will begin to cook.
  • It may seem hard, but once the egg mixture and the cream are blended, keep stirring for the creamiest texture.
  • Make sure to chill your pudding for at least an hour before serving to allow it to set properly and develop the perfect texture and flavor.

How to Serve Keto Banana Pudding

I choose to serve this sugar-free banana pudding generously topped with whipped cream and mini keto snickerdoodle cookies.

But there are other options: 

  • 1. To make your pudding look even more impressive, layer it in a clear glass dish with sugar-free whipped cream and crushed keto cookies. This will give your pudding a beautiful presentation and add some extra texture and flavor.In a transparent baking dish, you can put a layer made from crumbled keto banana bread, then add a layer of keto banana pudding and top with whipped cream;
  • In individual portions: Divide the pudding into individual serving cups or jars for a cute and convenient presentation.

Top each serving with whipped cream and crushed nuts for some extra texture and flavor. Drizzle some sugar-free caramel sauce over the top before serving.

  • Add the whipping cream and unsweetened milk to a medium saucepan. Bring to a boil over medium heat.
  • Meanwhile, in a bowl, whisk 4 egg yolks with the sweetener and a pinch of salt until combined.
  • Slowly incorporate 1/2 of the hot cream into the yolks mixture. Whisk continuously to avoid cooking the yolks. Return the mixture from the bowl to the saucepan and whisk continuously. Cook for 2-3 minutes until slightly thickened.
  • Turn off the heat and incorporate the butter, vanilla extract, and banana extract.
  • Sprinkle xanthan gum and whisk well to combine.
  • Divide between 4 serving glasses. Allow to cool at room temperature, then refrigerate for at least 1 hour before serving.
