Add the room temperature butter and sweetener to a large bowl. Mix for 1-2 minutes until smooth and creamy.
Stir in the almond flour, coconut flour, xanthan gum, pecans, salt, and vanilla extract.
Refrigererate the dough for at least 30 minutes.
Meanwhile, preheat the oven to 350°F/180°C.
Arrange little balls of dough on a baking sheet lined with parchment paper.
Bake for 10-15 minutes or until golden brown.
