With the spotlight on zucchini, these patties are one of my favorite dishes and a summer staple in my home. I’ve been preparing this zucchini fritters recipe for years, slightly modifying it from my classic pre-keto recipe by substituting flour with a mix of coconut flour and xanthan gum.

Just like my favorite broccoli fritters, and spinach fritters, these zucchini fritters can be prepared either by pan-frying or baking them in the oven. The result is always cheesy, delicious, gluten-free zucchini patties – a tasty way to up your veggie intake.

Zucchini fritters are one of my favorite dishes, and I’ve been making them for years now. This recipe is slightly adapted from the classic recipe I used before keto. You’ll see that instead of flour I use coconut flour and xanthan gum.

How to Make Keto Zucchini Fritters?

Here’s the key: if you desire zucchini fritters with crispy exteriors and moist (not soggy) interiors, you must drain the zucchini thoroughly.

Start by grating the zucchini, then add salt and set it aside for 10 minutes. To remove excess liquid, firmly squeeze handfuls of the zucchini using a clean dish towel or cheesecloth.

In a large bowl, combine the drained zucchini, coconut flour, Parmesan cheese, minced garlic, and egg. Season with salt and pepper to taste. Stir well until all the ingredients are thoroughly combined.

TIP: Feel free to use any cheese you have on hand, such as low-moisture mozzarella, provolone, or cheddar. I personally love a combination of cheeses. Parmesan is my usual choice because it adds abundant flavor and enhances the crispiness of the zucchini fritters.

To cook the zucchini fritters, heat olive oil or refined coconut oil in a skillet over medium-high heat.

Scoop approximately ¼ cup of batter for each fritter and place it in the skillet. Use a spatula to flatten the tops of the fritters gently.

Cook the fritters for about 2-3 minutes on each side, or until they turn a golden brown color. Adjust the temperature as necessary to achieve the desired level of crispiness.

Can I Bake These Zucchini Patties?

If you prefer to make baked keto zucchini fritters, preheat the oven to 400F/ 200C and line a baking pan with parchment paper. Arrange zucchini patties on the baking sheet and bake for about 35 minutes, flipping halfway. Bake until the patties have a golden brown color.

You can brush them with oil to get extra crispy patties.

It’s a freezer-friendly recipe too! Wrap the patties individually before freezing—store for up to 3 months. Thaw them in the fridge overnight or heat them in the oven when ready to eat.

Ingredients
  

  • 1 pound zucchini
  • 1 tsp salt
  • 1/4 cup coconut flour
  • 1/4 cup grated Parmesan
  • 1/2 teaspoon baking powder
  • 2 cloves garlic minced
  • 1 large egg beaten
  • ½ tsp xanthan gum
  • 1/2 tsp Kosher salt and ground black pepper to taste
  • 2 tablespoons olive oil or more for frying

Instructions
 

  • Grate the zucchini on the large holes of a box grater or using a food processor. Place the grated zucchini, in a colander over the sink. Gently stir in 1 tsp salt and toss to combine; let sit for 10 minutes.
  • Squeeze handfuls of zucchini using a clean dish towel or cheesecloth to drain as much liquid as possible.
  • In a large bowl, add zucchini, coconut flour, Parmesan cheese, minced garlic, and egg. Season with salt and pepper, to taste. Stir well to combine.
  • Heat olive oil or refined coconut oil in a large skillet over medium-high heat.
  • Scoop ¼ cup of batter for each fritter, flattening out the tops with a spatula.
  • Cook on each side for about 2-3 minutes or until golden brown. Adjust the temperature if needed.

Notes

  • Store leftovers in the fridge for up to 4 days or in the freezer for up to 3 months. 
  • If your dough seems too wet feel free to add more coconut flour to absorb all that moisture and make the zucchini patties super crispy and tasty.
