Ingredients for the Keto No-Bake Cheesecake

The ingredients for the sugar-free keto cream cheese filling in this recipe are simple, common, and perfect for four generous cheesecake servings. If you’re dedicated to the keto lifestyle, you may already have these items in your pantry. Let’s take a closer look at each ingredient:

no bake keto cheesecake ingredients
  • Cream Cheese (8 oz): This creamy and tangy ingredient serves as the base for our cheesecake filling. I recommend using cream cheese at room temperature, which allows for easier blending and creates a smoother filling. It’s important to let the cream cheese sit at room temperature for a while to achieve the ideal consistency.
  • Heavy Cream (1 cup): The heavy whipping cream adds richness and a velvety texture to the filling.
  • Sweetener (1/4 cup): To keep this recipe low carb and sugar-free, powdered sweetener is used as a substitute for traditional sugar.
  • Lemon juice (1 tsp): A small amount of lemon juice is added to provide a subtle tanginess that balances the richness of the cream cheese.
  • Vanilla extract (1 tsp): It brings out the natural sweetness and depth of flavor.

Choose the best cream cheese you can find. It must have the highest fat content you can find at the store. Philadelphia is a brand that never fails, but I tried this recipe with many other different brands, and it turned out great as well.

How To Make Keto No-Bake Cheesecake?

Let’s dive into the step-by-step process of creating this delectable sugar-free keto cheesecake. Get ready to indulge in creamy goodness! Here’s how to make it:

Prepare the Cheesecake Filling

In a bowl, add the room-temperature cream cheese. Using an electric mixer or a whisk, beat the cream cheese until it becomes smooth and creamy. This step ensures a silky texture for the cheesecake filling.

In a separate bowl, add the heavy whipping cream. Beat the cream until it becomes whipped and stiff peaks form. This will give the filling a light and airy consistency.

Transfer the whipped cream to the bowl containing the cream cheese. Using a spatula, gently fold the whipped cream into the cream cheese until well incorporated. This step ensures that the two ingredients blend together smoothly.

Add the powdered sweetener, vanilla extract, and lemon juice to the cream cheese and whipped cream mixture. Mix everything together until fully combined. This will provide the perfect balance of sweetness and flavor for the cheesecake filling.

Create the Keto Crust

For the crust, combine all the ingredients specified in the recipe (you can use crushed nuts, almond flour, or other low-carb options). Firmly press the mixture into the bottom of individual cups. This creates a delicious and satisfying base for your cheesecake.

Assemble and Chill

Spoon the creamy cheesecake mixture over the prepared keto crust in each cup. Distribute the filling evenly among the cups, ensuring a generous portion in each.

Place the cheesecakes in the refrigerator and let them chill for at least 1 hour, preferably overnight. This allows the flavors to meld together and the filling to set, resulting in a firm and creamy texture.

When you’re ready to serve, feel free to add your favorite toppings. Consider fresh berries, a drizzle of sugar-free chocolate sauce, or a sprinkle of crushed nuts to enhance the presentation and flavor.

  1. This may be a dumb question but how do you toast the almond flour? In the picture it looks like chocolate… Do you just heat it in a pan until it's dark?

    1. Yes, you are right. Add the almond flour in a dry pan over medium heat and stir it from time to time for about 4-5 minutes. I actually added some cinnamon to mine and probably that's why it looks a little bit darker. Adding some cocoa powder is definitely a good idea.

  2. Do you have any ideas to substitute the almond flour? We have nut allergies in the family so we avoid having nuts in the house. Would coconut flour work as well?

    1. You can make some low carb coconut flour cookies, crumble them and use as a crust for the cheesecake. I haven't tried to make the crust with coconut flour but it should work. Maybe you will need to add some coconut milk or cream because the coconut flour absorbs liquid better. If you try it let me know how it turned out!

LOVE this recipe!! Perfect taste! Only problem I have is that it doesn’t quite set enough in the fridge, it stays more of a custardy kind of texture. Not able to eat like a cheesecake, have to use a spoon. I’m wondering if I could add some xanthan gum or psyllium husk to help thicken it?
