  • 6 bone-in chicken thighs skin-on
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • 3/4 cup low sodium chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup sun-dried tomatoes chopped
  • 1/3 cup Parmesan cheese freshly grated
  • 1/2 tsp salt or more to taste
  • 1/4 tsp pepper or more to taste
  • 1 tbsp fresh parsley chopped to garnish

Instructions
 

  • Preheat the oven to 380°F/190°C. Generously season the chicken tights with salt and pepper on both sides.
  • Heat olive oil in a large cast-iron skillet over medium-high heat.
  • When hot, add the chicken to the skillet skin side down. Sear for 4 to 5 minutes until golden on each side. Remove the chicken from the skillet and keep warm.
  • Reduce the heat and cook minced garlic for about one minute or until fragrant. Stir in broth, heavy cream, chopped sun-dried tomatoes, and Parmesan cheese. Season with dried oregano and red pepper flakes. Bring to a simmer, then return chicken to skillet, then transfer to the preheated oven.
  • Bake for 15-20 minutes or until the chicken is cooked through. The internal temperature of the chicken should be 165°F.
  • Cover the chicken with sauce, garnish with freshly chopped parsley or basil and serve immediately with your favorite sides.

    Made this tonight for dinner and the whole family loved it , even my picky eater ! I’ve made several of your recipes and they’ve all been delicious. I’ll be making this many more times for sure .
