Finely ground the pecans, then lightly toast them  into a dry pan over medium heat until they start to smell nutty.

Cream the room temperature butter and sweetener, then mix the almond flour, coconut flour, xanthan gum, chopped toasted pecans, salt, and vanilla extract.

 Mix using your hands or hand mixer on low until the dough is formed. Wrap the dough in cling film and chill for at least 30 minutes.

Form little balls from the dough and arrange on the sheet pan, then bake them.  While they’re still warm, roll in powdered sweetener.

Allow to cool down then roll in more powdered sweetener. Enjoy!
