1.Wash the pumpkin and pat dry using a clean kitchen towel.

2&3. Cut the pumpkin in two then use a spoon to scoop out the seeds and pulp.

4. Use a sharp knife to carefully cut the pumpkin into four pieces.  

5.Place it in a baking dish and roast for about 40-50 minutes.

6. Remove the pumpkin from the oven and set it aside to cool. Then peel the skin from the pumpkin.

7. Transfer it to the bowl and pulse until smooth and creamy.
