 Add the eggs, salt, and pepper to a medium bowl and whisk until well combined.

Heat the olive oil in a large non-stick pan over medium-high heat, and cook the vegetables for  5 minutes or until tender.

Add 1/2 tbsp of olive oil in a 8-inch or 10-inch no stick skillet over medium heat, then pour the egg mixture and cook for 3 minutes until cooked evenly.

Add the cooked vegetables to half of the omelet, add the shredded cheddar cheese, and cover with the other half.

Gently tranfer the omelette onto a plate. Enjoy with avocado slices and tomatoes.
