  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 tbsp homemade taco seasoning
  • 12 oz romaine lettuce
  • 1 1/2 cup grape tomatoes
  • 3/4 cup sharp shredded cheddar cheese
  • 1 medium avocado
  • 1/2 cup chopped green onions
  • 3 tbsp sugar-free salsa
  • 3 tbsp sour cream


  • Heat a skillet over medium-high heat and add one tbsp olive oil.
  • Add the ground beef and brown for 8-10 minutes. Season with one tablespoon homemade taco seasoning.
  • Once the meat is evenly browned, remove from the heat, and drain all the excess fat.
  • In a big bowl add the chopped romaine lettuce, grape tomatoes, avocado, green onions, and the shredded cheddar cheese.
  • Top with the sour cream and salsa.
  • Add the cooked beef and toss all the ingredients to coat. Enjoy!
