Prepare the gelatin in a small bowl. Add the gelatin powder and mix it with the cold water. Let the mixture bloom for about 5 minutes, then microwave the mixture for 15-20 seconds until the gelatin is completely dissolved. Ensure not to overheat the gelatin to avoid destroying it.
Add the whipping cream and vanilla extract. Beat the mixture at medium speed with a mixer until the mixture looks fluffy and forms stiff peaks.
