  • 1 cup bacon chopped
  • 2 tbsp butter
  • 1 medium yellow onion diced
  • 5 cloves garlic finely chopped
  • 1 cup heavy whipping cream 200 ml
  • 1 cup low-sodium chicken or vegetable broth
  • 1/2 teaspoons xanthan gum
  • 3-4 cups broccoli florets
  • ½ tsp sea salt to taste
  • ½ freshly crushed pepper
  • 1 cup mozzarella cheese or cheddar cheese shredded
  • 1/3 cup parmesan cheese grated


  • In a large pan over medium-high heat fry the chopped bacon for about 2-3 minutes, until crispy. Transfer the bacon to a plate lined with paper towels to absorb some of the bacon fat.
  • Remove most of the bacon fat and melt the butter over medium heat. Add the onion and cook for 2-3 minutes until fragrant and translucent.
  • Transfer the broccoli into the pan. Season with salt and pepper and sauté constantly stirring for 2-3 minutes until the broccoli starts to change its color.
  • Add the garlic in the pan with broccoli and sautee for about 30 seconds.
  • Add in the heavy whipping cream and simmer for 4-5 minutes or until the sauce starts to thickens.
  • Sprinkle the cooked bacon and stir well. Add the parmesan cheese and mozzarella on top. Put a lid on and let the cheese melt for about 2-3 minutes for crisp broccoli or more for a softer broccoli texture. You can also Broil until cheese golden and completely melted.
  • Sprinkle fresh chopped parsley and serve!
