One-Skillet Creamy Tuscan Chicken Recipe – Easy & Low Carb

- 1½ pounds skinless boneless chicken breasts, sliced
- 1 ½ cups fresh baby spinach chopped
- ½ cup sun-dried tomatoes
- 2 tbsp olive oil or butter
- 1 cup heavy cream
- ½ cup low-sodium chicken broth
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- ½ cup parmesan cheese
- To garnish: fresh parsley chopped
Add the olive oil or butter into a large skillet over medium heat. Season the chicken breast with salt and pepper on both sides. Cook the chicken for 4-5 minutes on each side until well cooked. Transfer the chicken onto a large plate and keep warm.
In the same pan, whisk together the heavy cream, chicken broth, garlic powder, Italian seasoning, and parmesan cheese. Reduce the heat and cook the sauce for a few minutes or until it starts to thicken.
Add the sun-dried tomatoes and chopped spinach. Continue whisking until the spinach begins to wilt.
Place chicken back in the pan and cook for one more minute. Garnish with
freshly chopped parsley and enjoy!
