Ingredients

  • pounds skinless boneless chicken breasts, sliced
  • 1 ½ cups fresh baby spinach chopped
  • ½ cup sun-dried tomatoes
  • 2 tbsp olive oil or butter
  • 1 cup heavy cream
  • ½ cup low-sodium chicken broth
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • ½ cup parmesan cheese
  • To garnish: fresh parsley chopped

Instructions

  • Add the olive oil or butter into a large skillet over medium heat. Season the chicken breast with salt and pepper on both sides. Cook the chicken for 4-5 minutes on each side until well cooked. Transfer the chicken onto a large plate and keep warm.
  • In the same pan, whisk together the heavy cream, chicken broth, garlic powder, Italian seasoning, and parmesan cheese. Reduce the heat and cook the sauce for a few minutes or until it starts to thicken.
  • Add the sun-dried tomatoes and chopped spinach. Continue whisking until the spinach begins to wilt.
  • Place chicken back in the pan and cook for one more minute. Garnish with
    freshly chopped parsley and enjoy!
