Keto Beef Stew {Instant Pot, Crock-Pot, On the Stove}
This keto beef stew is the ultimate cold-weather comfort food. It's hearty, cozy, perfect for a family weeknight winter dinner. The beef is meltingly tender simmered in a delicious broth with celery, turnips, green beans, and onion.
Turn on the Instant Pot "Saute" function and add olive oil or butter.
When the oil starts to sizzle, add the chopped onion, garlic, salt, pepper, Italian seasoning. Stir frequently until the meat is beautifully browned on all sides.
Pour in the beef broth scraping all the brown bits from the bottom to avoid getting an Instant pot "Burn" error.
Add the rest of the veggies: turnips/ cauliflower, celery, carrots, green beans.
Add the tomato sauce, Worcestershire sauce.
Close the lid and turn the steam valve into the Sealing position.
Set the Instant Pot to cook on Manual High Pressure for 25 minutes. It will take about 10 minutes to come up to pressure.
When the cooking time is over, let the pressure release naturally for 10 minutes before doing a quick release.
Allow the keto beef stew to rest for a few minutes before serving garnished with freshly chopped parsley. Season with more salt and pepper, if desired.
