This keto coconut flour bread is super low carb, holds up well, and it's perfect for sandwiches. Easy low carb bread that needs only six ingredients and can be made from scratch in under an hour!
Preheat the oven to 350°F/ 180°C. Line a small 9 x 5-inch loaf pan with parchment paper and grease the sides.
In a large bowl, crack the eggs, add the melted butter, cream cheese, and a pinch of salt. Mix on medium speed for about 2 minutes until frothy.
Add the coconut flour and baking powder and continue mixing until a smooth batter forms. Let it rest for about 5 minutes for the batter to slightly thicken.
Transfer the batter into the lined loaf pan and use a rubber spatula to smooth the top.
Bake in the preheated oven for 45-50 minutes or until the top looks golden brown. It's ready when a skewer inserted in the thickest part comes out clean.
Let the bread cool for 10 minutes in the pan, then transfer to a rack and allow to cool completely.
Once cooled, remove from the pan, slice and enjoy with your favorite toppings.
Notes
The nutrition information is for one slice from 16 without any toppings.Do not use baking soda instead of baking powder, and try not to use more than the amount listed in the recipe. Using more baking powder can give your bread an acidic taste and a green-tinted color. Luckily, it's still okay to eat if you don't care about the color.
