Ready in 30 minutes and made from easy and naturally low-carb ingredients, this Mediterranean Chicken Skillet is a quick dinner that consists of pan-seared breast smothered in a refreshing and delicious tomato sauce.
In a large bowl, season the chicken breasts with onion powder, paprika, salt, and pepper. Mix well to ensure the chicken is evenly coated with the seasonings.
Heat the olive oil in a large skillet over medium-high heat.
Add the seasoned chicken breasts to the skillet and cook for about 5-6 minutes on each side or until they are browned and cooked through. The cooking time may vary depending on the thickness of your chicken breasts. Once cooked, remove the chicken from the skillet and set it aside.
In the same skillet, add the diced onions and minced garlic. Sauté for about 5 minutes or until the onions become translucent and fragrant.
Add the diced tomatoes with their juice to the skillet. Stir well to combine all the ingredients. Simmer for about 5 minutes to allow the flavors to meld and the sauce to thicken slightly.
Return the cooked chicken breasts to the skillet and coat them with the tomato mixture. Add the capers to the skillet as well. Cook for an additional 5 minutes, allowing the chicken to absorb some of the sauce and heat through.
Top the chicken with black olives and crumbled feta cheese.
Serve hot, and enjoy your Mediterranean-inspired chicken dish with capers!
