Instructions
Add the olive oil to a large pot over medium heat. Add the chopped onion and minced garlic and sauté until tender.
Cut the chicken thighs into bites size pieces, add cook for about 10 minutes.
Add the sun-dried tomatoes and quartered artichoke hearts, and cook for another 5 minutes.
Reduce the heat, then add the seasonings and mix until well combined.
Pour the chicken broth and simmer for 10 minutes.
Stir in the heavy cream. Add the spinach leaves, then cook for 5 more minutes on low.
Turn off the heat, garnish with fresh parsley and enjoy.
