Cheesy, crispy, and loaded with delicious flavor, this beef quesadilla is one of the easiest recipes that you can make for a quick lunch or a party with your friends.
Heat one tbsp of olive oil in a large pan over medium-high heat. Add the chopped onion and minced garlic and cook for 3-4 minutes until tender.
Add the ground beef, quesadilla seasonings mix. Cook until no longer pink, breaking up the meat as it cooks.
Now you can add the chopped pepper and cook for 5 more minutes until the pepper is tender.
Add the tomato paste and canned corn and stir until everything is well combined.
Cook for a few more minutes and set aside.
Assemble the Beef Quesadilla
Preheat a non-stick skillet over medium-low heat (without adding any oil).
Add one tortilla to the skillet, sprinkle shredded cheese on half of the tortilla, add a few tablespoons (about 1/3 cup) of the ground beef mixture, and top with more cheese.
Fold the tortilla in half and cook for 2 minutes on each side until the cheese is melted.
Remove the beef quesadilla from the skillet and repeat the process with the rest of the beef mixture.
