Ingredients

small eggplant
1/8 inch thick slices

small zucchini
1/8 inch thick slices

Roma tomatoes
1/8 inch thick slices

garlic cloves

medium carrot
shredded

can
14 oz crushed tomatoes

Instructions
Preheat the oven to 400F/200C.
Add oil to a nonstick pan over medium-high heat. Cook the onion, garlic, and shredded carrots for about 5 minutes or until tender.
Pour the crushed tomatoes, and add the seasonings. Simmer for 10 minutes or until slightly thickened. Season with salt and pepper to taste.
Pour the sauce into the bottom of a large casserole dish.
Arrange the sliced eggplant, zucchini, and tomatoes in a circular pattern.
Brush with the remaining olive oil.
Roast in the oven for 40 minutes until the vegetables are tender.
