Instructions
In a large pot, melt butter over medium heat. Sauté onion, celery, and carrots for 5 minutes until softened.

2 tbsp butter
Add minced garlic and cook for another minute.

Add ground beef, browning thoroughly. Drain excess fat.
1 pound lean ground beef
Mix in beef broth, basil, parsley, salt, and pepper. Bring to a boil, then simmer for 10 minutes.

Reduce heat to low, stir in heavy cream and cheddar until creamy.
