12ozsmoked sausageor 3 cups sliced into 1/2-inch rounds
1cuppumpkin or sweet potato diced into 1/2'' cubes
Preheat the oven to 400 degrees F and line a large pan with parchment paper.
Prepare the vegetables: wash and chop all vegetables into similar sizes, so they cook evenly. Then slice the sausage into 1/2-inch rounds.
Spread the sausage and vegetables onto a large baking sheet. Drizzle with olive oil, season with Italian seasoning, smoked paprika, minced garlic, salt, and pepper to taste. Toss to coat evenly.
Bake for 30-35 minutes until the vegetables are fork tender. Flip and stir the vegetables halfway through baking time.
