In a saucepan add the heavy cream and bring to a boil.  Add the sweetener and continue cooking for about 4-5 minutes.

Add the shredded coconut and almond extract. Let the mixture cool for about 15 minutes.

Scoop out about 1 tbsp (about 20 grams each) of mixture onto the prepared baking sheet. I made 14 molds.

– Press one almond on top of an each coconut bar. Place them into the freezer for about 1 hour. Meanwhile, melt the chocolate and cocoa butter.

Once firm, dip each coconut bar into the melted chocolate.  Refrigerate for at least 15 minutes to set the chocolate coating.
