Saute the mushrooms for about 5 minutes, or until they start to look golden brown on the edges.

– Mix in cream cheese and heavy cream. Reduce the heat and bring to a simmer, stirring from time to time.

– Add parmesan cheese and baby spinach leaves. Cook until the spinach is wilted for about 30 seconds.

Cut a pocket into each chicken breast then stuff the chicken breast.

Sear each side of the chicken breast for 3 minutes on each side until golden.

Bake in the preheated oven for 15-20 minutes or until the chicken is cooked through.
