Ingredients
- 2 tbsp olive oil
- 6 bone-in chicken thighs skin-on
- 3 cloves garlic minced
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes
- 3/4 cup low sodium chicken broth
- 1/2 cup heavy cream
- 1/2 cup sun-dried tomatoes chopped
- 1/3 cup Parmesan cheese freshly grated
- 1/2 tsp salt or more to taste
- 1/4 tsp pepper or more to taste
- 1 tbsp fresh parsley chopped to garnish
Instructions
- Preheat the oven to 375F/190C. Generously season the chicken tights with salt and pepper on both sides.
- Heat olive oil in a large cast-iron skillet over medium-high heat.
- When hot, add the chicken to the skillet skin side down. Sear for 4 to 5 minutes until golden on each side. Remove the chicken from the skillet and keep warm.
- Reduce the heat and cook minced garlic for about one minute or until fragrant. Stir in broth, heavy cream, chopped sun-dried tomatoes, and Parmesan cheese. Season with dried oregano and red pepper flakes. Bring to a simmer, then return chicken to skillet, then transfer to the preheated oven.
