PRE-PREPARATION

Preheat the oven to 425 degrees F/ 200 degrees C.

Pat dry the cod fillets with paper towels.

STEP 1

In a shallow bowl, crack the egg and beat it well.

STEP 2

 In a second bowl, combine the parmesan, lemon zest, and seasonings.

STEPS 3&4

Dip each piece of fish into the beaten egg, then coat both sides with the Parmesan mixture.

STEPS 5&6

 Arrange the parmesan crusted cod pieces onto a baking sheet coated with cooking spray, and bake for 10-12 minutes.

STEP 7

Serve with lemon wedges and sprinkle with fresh parsley.
