Place a large saucepan over medium heat and melt 1 tablespoon of butter. Cook the onion and garlic for 1-2 minutes or until translucent.
Add the rest of the ingredients(except the butter) and whisk to combine.
Bring to a boil, reduce the heat and gently simmer for 20 minutes or until the sauce is slightly thicker. Add the remaining butter and mix until well combined.
Taste test and add more sweetener or cayenne pepper if you want the sauce to be sweeter or spicier.
Allow to cool completely, transfer to a glass jar, and store in the fridge for up to 14 days.
