Thaw the frozen chopped spinach according to package instructions, and then drain it well. You can use a kitchen towel to squeeze out excess moisture from the spinach.
In a large mixing bowl, combine the drained spinach, finely chopped onion, minced garlic, eggs, kosher salt, black pepper, Parmesan cheese, mozzarella cheese, almond flour, and coconut flour. Mix well until all ingredients are evenly incorporated.
Heat olive oil in a large skillet over medium heat.
