Instructions
Preheat the oven to 400 F/204 C and line a baking sheet with foil or parchment paper. Place an oven-safe cooling rack on top.
In a small bowl, combine all the seasonings.
Pat dry chicken quarters with a dry paper towel and brush with olive oil.
Generously sprinkle with the seasoning mix and use your hands to evenly distribute the seasonings on both sides.
Place the chicken legs on the rack and bake for 35-45 minutes or until the skin looks crispy and the internal temperature reaches 165F.
Remove the chicken from the oven and rest for 5 minutes.
