These Protein Cookies combine almond butter and protein powder for a soft, chewy texture. Flourless, low carb, sugar-free, gluten-free, with 10g of protein.
Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper or a silicone baking mat.
Add the almond butter, powdered sweetener, protein powder, cocoa powder, eggs, almond milk, vanilla extract, and baking powder in a large mixing bowl.
Using a silicone spatula, mix all the ingredients together until a smooth, uniform dough forms. Ensure all the ingredients are well incorporated and there are no lumps.
Using a spoon or cookie scoop, drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart. Slightly flatten each cookie with the back of the spoon.
Place the baking sheet in the oven and bake for 10-12 minutes, or until the edges are set and the tops look slightly cracked.
Remove the cookies from the oven and allow them to cool on the baking sheet for about 5 minutes. Then, transfer them to a wire rack to cool completely.
