Ingredients
For the Chicken Marinade
1½poundschicken breastsboneless skinless , cut into 1½-inch pieces
Marinate the Chicken. In a large bowl, whisk together the olive oil, ranch seasoning, paprika, garlic powder, salt, and pepper. Add the chicken pieces and toss to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 8 hours.
Prepare the Skewers. If using wooden skewers, soak them in water for 20–30 minutes to prevent burning. Thread the marinated chicken onto skewers, leaving a little space between each piece so they cook evenly.
Make the Garlic Parmesan Ranch Sauce. In a small saucepan, melt the butter over medium heat. Add the minced garlic and cook for 1–2 minutes until fragrant, stirring frequently so it doesn’t brown. Remove from heat and stir in the ranch seasoning and grated Parmesan. Set aside. The sauce will thicken slightly as it cools.
Cook: Preheat the air fryer to 375°F (190°C). Arrange the skewers in a single layer without overlapping. Cook for 15 minutes, flipping halfway through, until golden and cooked through (internal temperature should reach 165°F or 74°C).
Finish with the Garlic Parmesan Sauce. Once the skewers are done cooking, brush them generously with the garlic parmesan ranch sauce. Sprinkle with chopped parsley and finish with a squeeze of lemon juice if using. Serve warm.
Notes
Oven Method
Preheat the oven to 400°F (200°C).
Line a baking sheet with parchment paper or lightly oil a baking rack.
Place the skewers in a single layer.
Bake for 18 to 20 minutes, turning halfway through, until golden and the chicken reaches 165°F (74°C).
Grill Method
Preheat your grill to medium heat.
Lightly oil the grates.
Grill the skewers for 10 to 12 minutes, turning occasionally, until lightly charred and cooked through.

Heat a large skillet or grill pan over medium heat and lightly oil it.
