Toss diced sweet potatoes (or squash) with olive oil, paprika, garlic powder, salt, and pepper. Air fry at 400°F (200°C) for 15–20 minutes, shaking halfway, until golden and tender.
Cook the Ground Beef
Heat a skillet over medium-high heat. Add ground beef and break it up as it cooks. Once mostly browned, stir in taco seasoning, tomato paste, salt and pepper. Cook until fully browned and slightly crispy in spots, about 7–8 minutes.
