 Bloom the gelatin. Add 1/4 cup of the heavy cream over the gelatin and whisk until well combined.

Add the remaining heavy cream, powdered sweetener, cocoa powder, and salt to a saucepan.

Cook for 5 minutes on low, constantly whisking until the mixture is smooth.

Remove the saucepan from the heat, stir in the vanilla extract and the gelatin powder.

Whisk until well combined.

Cover with plastic wrap and refrigerate for 2 hours until firm.

Let the chocolate pudding rest and enjoy!!
