Instructions
Preheat your oven to 350°F/ 180°C and line a baking sheet with parchment paper.
Mix the butter, cream cheese, and sweetener until fluffy and light in color.
Add in the egg, salt, and vanilla extract. Mix until well incorporated.
Mix in the almond flour and coconut flour until a soft dough forms. Refrigerate the dough for 30 minutes.
Use a small cookie scoop to scoop the dough and place cookie balls on the prepared baking sheet.
Flatten the cookies using your palm, then bake them for 10-12 minutes until the edges are golden brown.
Remove the baking sheet from the oven and let the cookies cool to crisp up.
