Ingredients
12ozsmoked sausageor approximately 3 cups sliced into 1/2-inch rounds
1cuppumpkin or sweet potatodiced into 1/2-inch cubes
Line a large baking sheet with parchment paper for easier cleanup.
Prepare the Vegetables and Sausage: Clean and rinse all the vegetables.
Dice the pumpkin or sweet potato into 1/2-inch cubes. Finely chop the red onion. Chop the bell pepper. If you have whole broccoli, break them down into bite-sized florets.
Slice the smoked sausage into 1/2-inch rounds.
Assemble on Baking Sheet: Spread the sliced sausage and prepped vegetables evenly onto the prepared baking sheet. Drizzle the entire mix with olive oil.
Evenly sprinkle the Italian seasoning, smoked paprika, minced garlic, salt, and pepper over the sausage and vegetables.
Toss everything gently to ensure they are well-coated with the seasoning and oil.
Baking: Place the baking sheet in the preheated oven.
Bake for approximately 30-35 minutes, or until the vegetables are tender when tested with a fork.
At around the 15-minute mark, take the baking sheet out and give the sausage and vegetables a good stir or flip to ensure even baking. Return to oven to complete baking.
Serve: Once done, take the baking sheet out of the oven.
Optionally, sprinkle with freshly grated Parmesan cheese while still hot. Serve immediately.
