Instructions
Preheat your oven to 350°F (180°C). Prepare a round 8-inch baking cake pan by greasing it or lining it with parchment paper.
Start by mixing the eggs with melted butter, heavy cream, vanilla extract, lemon juice, and lemon zest until frothy.
Mix in the almond flour, coconut flour, baking powder, and sweetener until you have a smooth batter. Pour the batter into the prepared cake pan.
Slice the strawberries and arrange them with the blueberries on top of the cake.
Place the cake pan in the oven and bake for about 40-45 minutes, or until a toothpick inserted into the center comes out clean.
While the cake is baking, prepare the cream cheese lemon frosting.
In a mixing bowl, beat the cream cheese, butter, powdered sweetener, vanilla extract, and lemon juice until smooth and creamy.
