Preheat your oven to 425°F (210°C). Prepare a standard muffin tray by lightly greasing each cup with cooking spray or oil.
Prepare Cauliflower Rice. Wash the cauliflower head thoroughly and remove any green leaves. Cut the cauliflower into florets and pulse them in a food processor until they resemble fine rice grains. You should get approximately 5 cups of cauliflower rice.
Microwave Cauliflower Rice. Place the cauliflower rice in a microwave-safe bowl and cover it with a microwave-safe lid or plastic wrap. Microwave on high for 5-6 minutes until the cauliflower is cooked.
Once the cauliflower is cooked, allow it to cool slightly. Then, transfer the cauliflower rice to a clean kitchen towel or cheesecloth. Squeeze out as much excess liquid as possible.
