This Cottage Cheese Apple Bake is soft and creamy, with tender cinnamon apples and a little vanilla in every bite. It tastes like a cross between apple pie and cheesecake, with just 160 calories per serving. An easy make-ahead breakfast that doubles as dessert!
Preheat the oven to 350°F (175°C). Line a 9-inch round baking pan with parchment paper or lightly grease it.
Add the cottage cheese, eggs, vanilla protein powder, sweetener, almond flour, cornstarch or coconut flour, vanilla extract, cinnamon, nutmeg, and salt to a blender.
Blend until completely smooth and creamy.
Peel and finely dice the 3 apples.
For softer apple pieces, microwave the diced apples for 1–2 minutes, just until they begin to soften. Let them cool slightly. This step is optional.
Fold the diced apples into the cottage cheese batter. Fold in the chopped pecans, if using.
Pour the batter into the prepared 9-inch round pan and smooth the top.
Bake for 45–50 minutes, or until the edges are completely set and the center has only a slight wobble.
Remove from the oven and let the bake cool.
Once it's no longer hot, cover and refrigerate until thoroughly chilled and firm.
Cut into slices and serve cold or lightly chilled.
