This Cottage Cheese Apple Bake is soft and creamy, full of tender cinnamon apples, and honestly tastes a little like apple pie and cheesecake had a breakfast baby. It’s a low-calorie, high-protein breakfast that doubles as dessert, especially with a little whipped cream on top.

I love that you still get little pieces of apple in every slice. Add vanilla and a tiny bit of nutmeg, and the kitchen smells so good while it’s baking that waiting for it to cool is probably the hardest part.

- Cottage Cheese Apple Bake
And before you ask, no, it doesn’t taste like a bowl of cottage cheese. Once everything is blended, the curds completely disappear and the batter turns smooth and creamy. After it bakes and chills, the texture gets even better: dense, creamy, and almost cheesecake-like.
It’s also gluten-free, made with a sugar-free sweetener, and packed with protein-rich ingredients like cottage cheese, eggs, and vanilla protein powder, so it works really well as a high-protein breakfast that still feels like something a little special.
I usually make this cottage cheese apple bake the night before, then grab a slice in the morning and add some Greek yogurt and extra cinnamon. Breakfast is already waiting in the fridge, and I can get straight to making my coffee.

Why You’ll Love This Cottage Cheese Apple Bake
- Full of real apple: Three apples give you tender pieces throughout every slice.
- Made with protein-rich ingredients: Cottage cheese, eggs, and vanilla protein powder all contribute protein.
- Creamy and cheesecake-like: Chilling completely changes the texture and makes it denser and creamier.
- Made with a sugar-free sweetener: You can control the sweetness depending on your apples and protein powder.
- Can be gluten-free: Just make sure your protein powder and other packaged ingredients are certified gluten-free if needed.
- Great for meal prep: Bake it ahead and keep the slices chilled for easy breakfasts or snacks.
- Breakfast or dessert: It’s cozy enough for breakfast but definitely sweet enough to enjoy after dinner too.
Ingredients You’ll Need
- Cottage Cheese: This is what gives the bake its creamy base. Once it’s blended with the other ingredients, the curds disappear completely. You shouldn’t end up with little pieces of cottage cheese in the finished bake.
- Eggs: Three large eggs help everything set in the oven while keeping the middle soft and creamy instead of turning it into a dry cake.
- Vanilla Protein Powder: Vanilla protein powder adds protein and gives the batter even more vanilla flavor. Protein powders can taste very different from one brand to another, especially when it comes to sweetness, so keep that in mind before adding all of the sweetener. If you need this recipe to be gluten-free, check that your protein powder is labeled gluten-free.
- Powdered Sweetener: Use your favorite powdered sweetener. Since the apples and protein powder may already add sweetness, you can adjust the amount slightly to your taste. A sugar-free powdered sweetener works really well here.
- Almond Flour: You only need 2 tablespoons. It gives the bake a little structure without making the finished texture feel like regular apple cake.
- Cornstarch or Coconut Flour: You’ll need just 2 teaspoons. Either one helps absorb some of the moisture from the cottage cheese and apples so the chilled bake sets more firmly.
- Vanilla Extract: Vanilla is so good with apple, cinnamon, and nutmeg and helps give the whole thing that apple-pie feel.
- Cinnamon: This is the main cozy spice in the recipe.
- Nutmeg: You only need a little. It should sit in the background rather than overpowering the cinnamon and apple.
- Apples: You’ll need 3 large apples, peeled and finely diced. Keeping the pieces fairly small helps them soften while baking and means you get apple throughout every slice.
- Pecans: Completely optional, but really good if you want a little crunch mixed into the creamy bake.

Should You Soften the Apples First?
You don’t have to. If you like your apples to keep a little more texture, simply fold the finely diced apples directly into the batter.
For softer, more apple-pie-like pieces, microwave the diced apples for 1–2 minutes, just until they begin to soften. Let them cool slightly before folding them into the cottage cheese batter. You don’t need to cook them until completely soft—they’ll continue cooking in the oven.
How to Make Cottage Cheese Apple Bake
This cottage cheese apple bake starts with a smooth blender batter, then the diced apples and pecans get folded in by hand.
Prepare the Pan
Preheat the oven to 350°F (175°C).
Line a 9-inch round baking pan with parchment paper or lightly grease it.
I like using parchment because once the bake is completely chilled, it’s much easier to lift it out and cut clean slices.
Blend the Cottage Cheese Batter
Add the cottage cheese, eggs, vanilla protein powder, powdered sweetener, almond flour, cornstarch or coconut flour, vanilla extract, cinnamon, nutmeg, and salt to a blender.

Blend until completely smooth and creamy.

Take an extra moment here if needed, you don’t want any visible cottage cheese curds remaining.
Prepare the Apples
Peel and finely dice all 3 apples.
If you prefer softer apples, microwave them for 1–2 minutes until they just begin to soften.

Let them cool slightly before adding them to the batter.
Fold in the Apples
Pour the blended cottage cheese batter into a large bowl. Gently fold in the diced apples.
Don’t blend them into the batter. Keeping them in little pieces means you get actual apple in every slice.

Fold in the chopped pecans now too, if you’re using them.
Fill the Pan
Pour the batter into the prepared 9-inch round pan and spread it into an even layer.

Bake
Bake for 45–50 minutes, or until the edges are completely set and the center has only a slight wobble.
With all those apple pieces, don’t rely only on the clock. Look at the center too.

You don’t want the middle to look liquid, but it doesn’t need to be completely firm when you remove it from the oven.
The bake will continue to set as it cools and will firm up even more once chilled.
Cool and Chill
Remove the Cottage Cheese Apple Bake from the oven and let it cool.
Once it’s no longer hot, cover it and transfer it to the refrigerator.

Chill until completely cold and firm before slicing.
This part really matters. The bake is much softer while warm, but once chilled, the middle becomes denser, creamier, and much more cheesecake-like.

Cut into slices and serve cold or lightly chilled.
My Best Tips
- Dice the apples fairly small. With three apples in the recipe, smaller pieces distribute much more evenly and cook more easily.
- Blend the cottage cheese really well. This is what gives you a smooth, creamy texture instead of visible curds.
- Soften the apples if you like them extra tender. A quick 1–2 minutes in the microwave is enough.
- Don’t blend the apples into the batter. Fold them in so you keep those little apple pieces throughout.
- Watch the center, not just the clock. You’re looking for set edges and only a slight wobble in the middle.
- Definitely chill it before slicing. The texture is completely different once it’s cold.
- Adjust the sweetness to your protein powder. Some vanilla protein powders are much sweeter than others.

What to Serve with Cottage Cheese Apple Bake
For breakfast, my favorite is a spoonful of Greek yogurt and another sprinkle of cinnamon. A little almond butter or a few chopped pecans are lovely too.
If you’re serving it for dessert, add whipped cream and a small drizzle of sugar-free maple syrup. The apples and spices already bring plenty of flavor, so you don’t need much on top.
Make Ahead and Storage
I prefer making this one the night before so it has plenty of time to chill. The next morning, all that’s left is cutting a slice and adding my toppings.
Refrigerate the bake within 2 hours of baking. Once chilled, cover the pan tightly or store individual slices in an airtight container for 3–4 days.
Serve straight from the refrigerator, or let your slice sit out for a few minutes if you prefer it a little less cold.

Frequently Asked Questions
Can You Taste the Cottage Cheese?
Not really. Once the cottage cheese is blended with the eggs, vanilla protein powder, sweetener, and spices, its flavor becomes very mild.
The finished bake should taste creamy rather than curdy.
Is Cottage Cheese Apple Bake Gluten-Free?
It can be. The main ingredients are naturally gluten-free, but protein powders and some packaged ingredients can vary.
If you need the recipe to be strictly gluten-free, use a protein powder and other packaged ingredients that are labeled or certified gluten-free.
Can I Use Fewer Apples?
Yes, although the finished bake will have less apple flavor and slightly less moisture.
This updated version is written for 3 large apples.
Can I Skip the Protein Powder?
I haven’t tested this exact version without it. Protein powder adds more than protein here and it also acts as part of the dry ingredients. Simply leaving it out could make the bake softer, so I wouldn’t omit it without adjusting the recipe.
Why is my cottage cheese apple bake too soft to slice?
It may need more time in the refrigerator. Let it become completely cold before cutting. If it stays loose after chilling overnight, excess moisture or underbaking may be the cause.
