These no-bake keto coconut balls are soft, lightly sweet, and packed with coconut flavor. Made with five simple ingredients, they are an easy sugar-free dessert with only 1 gram of net carbs per ball.
Line a small baking sheet or large plate with parchment paper.
Add the shredded coconut, almond flour, sweetener, coconut milk, melted coconut oil, and vanilla to a food processor.
Process for 1 to 2 minutes, stopping to scrape down the sides as needed. The mixture should begin clumping together and hold its shape when pressed between your fingers.
If the mixture is crumbly, add coconut milk 1 teaspoon at a time. If it is too sticky to shape, refrigerate it for 10 minutes.
Divide the mixture into 14 equal portions using approximately 1 tablespoon for each one. Press and roll each portion into a ball.
Place the coconut balls on the prepared tray and refrigerate for at least 20 minutes, or until firm.
