This easy zucchini slice is the perfect make-from-scratch recipe for a quick lunch or cozy dinner. Made with cheese, bacon, and fresh zucchini, it’s a hearty, healthy casserole that’s always a hit with the whole family.
Preheat the oven to 180°C (350°F). Grease or line a 9x13-inch baking dish with parchment paper.
In a large mixing bowl, add all the ingredients: eggs, milk, grated zucchini (squeeze out excess moisture if very wet), flour, onion, bacon, cheeses, baking powder, garlic powder, oregano, and salt. Mix everything together until well combined. The mixture should be thick but pourable.
Pour the mixture into the prepared baking dish and smooth out the top.
Bake for 35–40 minutes, or until the top is golden brown and the center is fully set (a toothpick should come out clean).
Remove from the oven and let it cool for at least 30 minutes before slicing. This helps it firm up and makes it easier to cut.
