Ingredients
2zucchini large, cut into 16 1/2-inch thick slices
Prepare and Season the Zucchini. Slice the zucchini into 16 1/2-inch thick rounds. Toss the zucchini slices with olive oil, 1 tsp salt, 1/4 tsp pepper, 1 tsp paprika, 1 tsp Italian seasoning, and 1 tsp garlic powder until evenly coated.
Cook the Zucchini.
Skillet Method: Preheat your skillet over medium-high heat. Add a splash of olive oil to coat the pan. Arrange the seasoned zucchini slices in a single layer and cook for 2-3 minutes on each side until golden brown and tender.
Air Fryer Method: Preheat your air fryer to 400°F (200°C). Arrange the zucchini slices in the basket, making sure not to overcrowd them. Cook for 5-7 minutes, flipping halfway through, until they are golden and tender.
Prepare the Meat. Mix the ground beef in a bowl with the remaining 1 tsp salt, 1/4 tsp pepper, and 1 tsp paprika until well combined.
Shape the mixture into small patties approximately the same size as the zucchini slices.
Cook the Patties. Preheat your air fryer to 375°F (190°C).
Place the patties in the air fryer basket in a single layer, ensuring they are not overcrowded (you may need to cook them in batches).
Cook for 8-10 minutes, flipping halfway through, until the patties are fully cooked and have an internal temperature of 160°F (71°C).
Assemble the Sliders. Place a zucchini slice on a serving platter and top with a cooked beef patty.
Spread a dollop of yum yum sauce on another zucchini slice and place it on the slider, creating a sandwich.
