Add the egg to a large bowl and whisk until frothy.

Add the rest of the ingredients and mix well until all ingredients are evenly incorporated.

Heat olive oil in a large skillet over medium heat.

Once the oil is hot, scoop about 2-3 tablespoons of the spinach mixture and place it gently into the hot oil. 

Form it into a small patty or fritter shape using a spoon.

Cook the fritters on each side for 2-3 minutes or until they are golden brown and crispy.

Once the fritters are cooked through and crispy on both sides, remove them from the skillet and place them on a plate.
