Add the tuna, zucchini, celery, mayonnaise, mustard, chopped onion, salt, pepper, and 1/4 cup of shredded cheese in a large bowl.

Mix until well combined.

Transfer the tuna mixture to a 1-quart casserole dish.

Sprinkle with the remaining shredded cheese. 

Bake for 15 minutes until golden on top.

Remove from the oven, garnish with fresh chopped parsley, and enjoy.
