Pat the pork chops dry with paper towels. Use a sharp knife to create a pocket in each chop, being careful not to cut through to the other side.

In a small bowl, mix paprika, red pepper flakes, thyme, oregano, onion powder, and 1 tsp salt. 

Rub this mixture evenly on both sides of each pork chop.

In a mixing bowl, combine softened cream cheese, grated Parmesan, shredded mozzarella, minced garlic, spinach, and 1 tsp salt. Mix until well combined.

Stuff each pork chop pocket with the spinach and cheese mixture, pressing down gently to ensure it's packed well. Secure with toothpicks.

Place the stuffed pork chops in a greased baking dish. Bake in the preheated oven for about 25-30 minutes, or until the pork reaches an internal temperature of 145°F (63°C).

Let the stuffed pork chops rest for a few minutes before serving. This helps the juices redistribute, keeping the pork moist and flavorful.
