Preheat the oven. Preheat your oven to 400°F (205°C). Line a baking sheet with parchment paper and lightly grease it with nonstick spray.
Whip the egg whites. Add the egg whites to a large mixing bowl. Using an electric mixer or stand mixer, beat until very stiff peaks form. The mixture should look glossy and hold its shape when you lift the beaters.
Fold in the dry ingredients. Add the protein powder, salt, and Italian seasoning, if using. Gently fold everything together with a spatula until fully incorporated. Try not to overmix, so the egg whites stay fluffy.
Shape the crust. Spoon the mixture onto the prepared baking sheet and spread it into a 9-inch round crust. Keep the layer even so it bakes properly.
