Instructions
Heat the olive oil in a large pot over medium-high heat.
Cook the onion, minced garlic, and ginger for 3 minutes.
Next, add the bell peppers, broccoli, cauliflower, Italian seasoning, salt, and black pepper. Stir and cook for 5 more minutes.
Pour the chicken broth over the vegetables, then add the chicken breast and simmer for 20 minutes.
Remove the chicken breast from the pot and shred it using 2 forks.
Return the shredded chicken to the pot and simmer for 5 more minutes.
Turn off the heat, add the lemon juice, and enjoy.
