Wash and trim the zucchini, then slice into ½-moon pieces, about ¼ inch thick. Keeping them uniform helps them cook evenly.
Place the zucchini slices in a large bowl. Add olive oil, Parmesan, garlic powder, paprika, Italian seasoning, salt, onion powder, and black pepper. Toss until everything is well coated and the seasoning sticks to each piece.
Preheat your air fryer to 400°F (200°C). Arrange the zucchini in a single layer in the air fryer basket—don’t overcrowd or they won’t crisp up properly.
Air fry for 10–12 minutes, shaking the basket halfway through, until the zucchini is golden, crisp around the edges, and tender inside.
Transfer the first batch to a plate and enjoy warm. Add the remaining zucchini to the basket and repeat until all of it is cooked to crispy, savory perfection.
