Boneless skinless chicken breasts

Instructions
Heat olive oil in a large pot over medium-high heat.
Add the chopped onion, garlic, and ginger, cooking for about 3 minutes until fragrant.
Stir in the bell peppers, broccoli, and cauliflower. Add Italian seasoning, salt, and black pepper. Cook for another 5 minutes.
Pour in the chicken broth, then add the whole chicken breasts. Cover and simmer for 20 minutes.
Remove the chicken from the pot and shred it using two forks.
Return the shredded chicken to the pot.
Simmer for 5 more minutes, then stir in the lemon juice or apple cider vinegar. Taste and adjust seasoning if needed.
Notes

One serving
is about
1.5 to 2 cups
of soup per person.
Make It Spicier:
Add a pinch of red pepper flakes for an extra kick.
Make It Vegan:
Use vegetable broth and replace the chicken with chickpeas or tofu.
