These no-bake Lemon Cottage Cheese Truffles have a soft lemon filling covered in a thin sugar-free white chocolate shell. Made with blended cottage cheese, almond flour, coconut flour, and nut butter, each truffle has 4 grams of protein.

After making my Lemon Cottage Cheese Protein Bars, Cottage Cheese Lemon Chia Pudding, and Cottage Cheese Lemon Cheesecake, I wanted another small lemon dessert that did not require baking. These truffles take a little time to shape and coat, but most of the total time is hands-off chilling.

The filling comes together in just a few minutes, and the rest of the recipe is simply shaping, chilling, and dipping the truffles in melted white chocolate. They’re perfect for making ahead and keeping in the fridge whenever you’re craving something sweet but don’t want to bake a full dessert.

Cottage cheese: Full-fat cottage cheese gives the filling the smoothest texture. Drain off any visible liquid before measuring, then blend until no curds remain.

Almond Flour – Finely ground almond flour gives the filling structure while keeping the center soft. Use blanched almond flour rather than coarse almond meal for a smoother texture.

Coconut Flour – Coconut flour absorbs moisture and helps the truffles hold their shape. Since it is highly absorbent, the mixture needs a few minutes to rest before you decide whether to add more.

Almond Butter or Cashew Butter – Either one adds richness and helps bind the filling. Almond butter has a slightly nuttier flavor, while cashew butter is milder and lets the lemon stand out more.

Powdered sweetener: Use the exact 1:1 powdered sugar substitute listed in the recipe card. Granulated sweetener may leave the filling gritty, and concentrated sweeteners cannot be substituted in the same quantity.

Fresh lemon juice and zest: Lemon juice adds acidity, while zest provides most of the lemon aroma without making the filling wetter. Avoid grating the bitter white pith underneath the yellow skin.

Vanilla Extract – Vanilla rounds out the lemon flavor and adds a little extra sweetness.

Salt – A small pinch brings out the lemon, vanilla, and white chocolate flavors.

Sugar-free white chocolate: White chocolate creates the outer shell. Different brands melt differently, so use the exact product tested whenever possible.

How to Make Lemon Cottage Cheese Truffles

Blend the Cottage Cheese

Add the cottage cheese to a food processor and blend until completely smooth and creamy.

Stop and scrape down the sides of the bowl as needed. Continue blending until no visible curds remain.

Make the Lemon Filling

Add the almond flour, coconut flour, almond butter or cashew butter, sweetener, fresh lemon juice, vanilla extract, and salt.

Blend again until a thick, soft mixture forms and everything is evenly combined.

Let the filling rest for five minutes. This gives the coconut flour time to absorb some of the moisture and naturally thicken the mixture.

Check the Consistency

The filling should be soft but firm enough to roll.

If it still feels too sticky, add one additional teaspoon of coconut flour. Blend again and wait another two minutes before deciding whether it needs more.

Shape and Chill the Truffles

Divide the filling into 15 equal portions and roll each one gently between your palms.

Place the truffles on a parchment-lined plate or tray, then freeze them for 15 to 20 minutes. They should feel firm enough to dip without losing their shape.

Melt the White Chocolate

Add the sugar-free white chocolate chips and coconut oil, if using, to a microwave-safe bowl.

Microwave in 20-second intervals, stirring well after each one, until the chocolate is smooth and completely melted.

Coat the Truffles

Dip each chilled truffle into the melted white chocolate. Lift it out with a fork and allow the excess coating to drip back into the bowl.

Return the truffle to the lined tray and immediately sprinkle it with finely grated lemon zest.

What I Learned While Making These Truffles

The filling will look softer immediately after mixing than it does after resting. Give the coconut flour the full 5 minutes to absorb moisture before adding more.

The cottage cheese brand makes a noticeable difference. Drain liquid sitting on top, but do not squeeze the cottage cheese dry because the filling still needs moisture to remain soft.

Keep most of the shaped truffles in the freezer while you dip a few at a time. They are much easier to coat when cold and firm, but they do not need to be frozen solid.

Sugar-free white chocolate can become thick quickly. Use short microwave intervals, stir frequently, and stop heating as soon as it becomes smooth.

How to Store

Store the truffles in an airtight container in the refrigerator for up to 4 days. Keep them in a single layer or place parchment paper between the layers to protect the white chocolate coating.

Serve them cold or let them sit at room temperature for about 5 minutes if you prefer a softer center.

Can you taste the cottage cheese?

Can I make the truffles without white chocolate?

  • Blend again until a thick, soft mixture forms and all the ingredients are evenly combined.
  • Let the mixture rest for 5 minutes so the coconut flour can absorb some of the moisture.
  • Check the consistency. If the mixture is still too soft or sticky to roll, add 1 additional teaspoon of coconut flour. Blend again and let it rest for another 2 minutes before adding any more.
