1. Make the sauce. Grate the carrot and cook it with the onion and garlic in olive oil until tender.

2&3. Then add the crushed tomatoes and seasonings and simmer for about 10 minutes.

4.Prepare the vegetables: Clean the vegetables and slice them into 1/8 inch thick slices.

5. Place the tomato sauce made into the bottom of a baking dish.

6. Arrange the vegetables as you like in a circular pattern. 

7. Brush the vegetables with olive oil and bake them until tender.
