In a large mixing bowl, combine the melted butter, egg, and vanilla extract. Mix these ingredients using an electric mixer for 1-2 minutes until frothy.

– Gradually add the almond flour, sweetener, xanthan gum, and baking powder to the wet mixture. Mix until the ingredients are well combined and there are no lumps.

Use a spatula to gently fold in ¼ cup of chocolate chips into the dough.

Spoon approximately one tablespoon of cookie dough into each muffin cup.Press lightly in the center with a measuring spoon to create a well.

Bake in the oven for 10-15 minutes, until the middles are cooked and lightly golden. Remove the cookie cups from the oven and let them cool completely.

Fill each cookie cup with the melted chocolate mixture. Allow the chocolate-filled cookie cups to set before serving.

Sprinkle sea salt flakes – it really brings out the chocolate flavor. Or, for a sweet twist, drizzle some keto-friendly caramel on top.
